Malabar Spinach in the Edible Landscape

Have you ever heard of Malabar Spinach? It is not a true spinach, but rather a beautiful soft-stemmed vine. I was introduced to it when a friend of mine suggested I get some. She told me that it was an edible vine and there were only a few left at Gecko Hardware, where I would frequent in Dallas, Texas. Sure enough, I went over and bought the last one on the shelf for the season. 

Malabar Spinach Basel alba "Rubra" is an edible perennial vine in the family Basellaceae. This is the one I have. It's stem and seeds are reddish purple.

I like the idea of having an edible landscape and there are several places around the house that would typically be landscaped with shrubs but here, you will find tomato plants, peppers and Malabar. I took the pot home and planted it next to the patio where it was able to grow on a trellis. Being so late in the season I was surprised how well it grew and how easy it was to establish.

​This is an ideal plant to have on a fence where it can grow to its heart's content, providing leaves that are readily available for your cuisine! It looks very pretty too. From what I can tell it is relatively pest free - I don't want to jinx myself, but it seems to have been less affected than anything else we have and we don't use chemical fertilizers or pesticides. So there you go. Who could ask for a better plant than one that grows easily, it's beautiful and doesn't have to be babied because of bugs?

I have it growing next to the patio and also next to the house in a flower bed. It loves to climb so if you want to grow this, be sure to have a trellis or something for it to climb on.

It likes full sun but I also have it in a shady area. It likes sandy loam with rich organic matter. I had no problem propagating with either cuttings or after seed had ripened and fallen.

In the winter I cut it back and put mulch on top.

The plant grows from seed so it's easy to pull to thin out or to transplant.
Malabar spinach is rich in vitamins A and C, iron and calcium. It is also known to contain antioxidant properties making it a healthy choice for eating!

The leaves and stems can be eaten raw or cooked and are used in a variety of dishes prepared in many ways. It is used in various Asian, Chinese, Philippine and Latin American dishes. I am anxious to learn of other ways to prepare it because so far, I have LOVED my Malabar on sandwiches, in my frittata and in soups!

You just can't go wrong eating a sandwich topped with Malabar!! We are so happy that we have this available right off the patio! All I do is go cut off the leaves, wash and spin them in the salad spinner. Chill in the fridge and we're ready to have it on a sandwich or in a salad with other greens.

There are a couple of options that I use for the abundant harvest. One is to dehydrate the Malabar. This way, I can add the crushed leaves to soups for flavoring. I am in the process of dehydrating so it will be interesting to see how it turns out. Probably won't be much different than other leafy vegetables.

The other way I preserve is freezing. Once the leaves are dry I put them in a freezer bag and mark it. You can see an extra bag in there... I decided that since I hadn't tried the stems in cooking yet, I wanted it separated from the rest. I am not sure if the size of the stems matter and if it affects the taste, but if you know, please do tell!!!  

I like to use the frozen Malabar in my frittata and in a smoothie! For a smoothie, you can add it just like you would kale or any other green vegetable. I like mine with a frozen banana and Pure Protein Complete meal shake mix with coconut milk.

Oh, this is the most tasty breakfast! Especially if you have fresh home grown veggies! Mmmmm! It's so easy and you can mix it up any way you like. Add more bacon, or not. Add more veggies, or not. Get the idea?

There's no hard fast rule to this. That's what makes it so easy! Here's the basic recipe for 2 servings.

  • 2 slices bacon, fried and chopped
  • 3 scallions or green onions, chopped
  • 1 banana pepper or 1/2 bell pepper, chopped
  • 2 chicken eggs and 1 duck egg (or 3 chicken eggs)
  • 1/8 cup of milk
  • 1 tsp Juvaspice
  • 1 drop Black Pepper Vitality™
  • 1 Handful of Malabar spinach, chopped in quarter size pieces
Stir and fry all ingredients in a standard size frying pan.
  1. After bacon is done (drain grease), chop and add onions and peppers. Cook  till carmelized.
  2. Add Malabar and stir until wilted.
  3. Whisk eggs, milk and seasonings together and pour on top of vegetables.
  4. Cook till done, minimally turning until light and fluffy.

Serve with rye toast and fruit.

I posted my little sticker for Throne Scents a long time ago on Pinterest and I think it's been the most popular pin I've ever had!! LOL

So I thought, hey, why not have a little fun with this and then I'll go on with my life, OK? So... do you really want to talk about this? 

First of all I have to tell you I grew up with three older brothers. Did you? Do you remember the games kids played while growing up, like who can tickle who till they pee their pants? Did anyone ever fart on your head? Maybe that was what did me in!! My older brothers thought it was sooooo funny but I got back at them while running after them with a dirty diaper. I guess I wasn't potty trained by the time I could walk, but how could I be, when boys take so long in the bathroom anyway?


​Which brings me to another point! I remember, being grade school age and up, waiting and pacing in the hallway at home while one of my brothers was in the bathroom and me hollering at him to hurry up!! But once I got in there - O - M - G !! If we only had Throne Scents to spray on the toilet water before going, it could have saved us all. Gah!

We all just want to smell the roses, right?
So we go on through life and we all have our bodily functions, ok? Nobody wants to aromify everywhere unless it's one of my brothers walking down the isle with me at the store, where they can fart and holler, "Cheryl, why did you do that?" Oh yeah that's fun, especially when you're a teenager!

Sometimes people just have to go and sometimes it's at the most inopportune time! It would be nice to have a little help freshening things up in the bathroom. It would be nice not just for you but for your guest as well. I'm thinking of others here and how we all share the same air.

I have a solution - literally!

This little concoction also makes a great gift for the king or queen in your life, crowning them on their throne! Haha! Make this simple spray with essential oils that will help maintain the pleasant space in your bathroom without using toxic chemicals. It will flat out take care of the odor.

The Throne Scents recipe is not an AIR spray - it goes ON the water. 

Spray 3 or 4 pumps onto the toilet water before going number 2! That's it! Whoever you are sharing this space with will be glad you did, as well as YOU when THEY use it!
Here's what you need:
  • 8 oz. spray bottle
  • 1/2 tsp rubbing alcohol
  • 10 drops Lemongrass Essential Oil
  • 10 drops Grapefruit Essential Oil
  • 10 drops Bergamot Essential Oil
  • Distilled or purified water to fill

Shake and spray!

​After you spray it on the water, the oils will disperse and create a vapor barrier trapping odors! You could try making your own special mix with other oils.

I used a smaller bottle and calculated the amounts to go in it, so now I can have one in each bathroom. You can find these small bottles at Walmart.
Make Your Own Usable Gag Gift!

Personalize your magazine with a picture and some fun sayings or a collage.
I made this as a usable gag gift for a friend one time. I had a magazine and I downloaded a picture of him to use on the front of it. Then I actually found a little gold plastic crown at a garage sale that was flat!! It fit perfectly on top of the picture that I had adhered to on the magazine. Glue sticks work great. I also added his birthday and some other verbiage on the front. It was really funny. Now, he had his own magazine (all about him) to read while he was sitting on his throne! Haha!
I hope you try Throne Scents and see how well it works. I'd love to know what other combinations, you used that you liked.

How Clean is Your House?

It's not so much about the lack of dust and dirt or clutter, but how clean is your house in reference to being nontoxic? I'm talking... Can you breathe in there?? Is anyone in your family experiencing eye irritation? Do you really want your one year old laying so close to the carpet or actually on the floor that was just doused with some chemical that you lovingly cleaned with for baby to play on?

Although most enter our system through inhalation, remember it only takes 26 seconds for a chemical to enter the bloodstream through our skin. This is an interesting article about that> Huffington Post

Just like everybody else, I used to buy all the ordinary cleaning products at the grocery store... ewwww... how I detest it all now! When using so many products laced with chemicals and damaging ingredients, IMHO, they are nothing but trouble when it comes to respiratory health.  

I’m not going to lecture you about the frequently used hazardous substances, but if you want to look some up go to> NCBI and you will find a wealth of information. It will make you wonder why mainstream products are glorified on our store shelves and in advertising. The media makes it out to be a breath of fresh air but, ummm, I don't think so!

I have been in a house after the cleaning service had left and I could smell the fumes. Sometimes my eyes burn. Ok, does that make me a wimp? No. It just shows me that my body recognizes the awful chemical laden air in which I am being exposed to. It's probably because I am in the habit of cleaning with something that is natural and smells good. Even at that, as with any cleaner, you still want to use precaution during use and upon storage around children.

Guess what, though? I found that I could replace all the old cleaning products with one that is concentrated and effective. I love my Thieves Household Cleaner. It only takes a capful of Thieves Household Cleaner into a large spray bottle for general all purpose cleaning. If I need some extra scrubbing power, I add baking soda and some of my spray to make a paste. If I want a more intense citrusy scent, I add a couple drops of lemon essential oil or citrus fresh essential oil. If you do the math you will be surprised how much money you are going to save. 

Have you ever wondered how many people have a cleaning crew at their home using the same old cleaning products? They may also have children at home who have respiratory issues. I have thought about that and wanted to share this little story with you.

I recently learned of a woman who had a cleaning business and her lungs and health had gotten so bad that her pulmonologist doctor told her she had to find a new job. Cleaning was all she had known. While visiting my family in South Carolina, I spent some time with my brother, Randy, who lives near the fishing village of McClellanville. He cooked up a batch of shrimp for dinner and it was fabulous! I'm telling you, there's nothing better than fresh shrimp from the ocean!! 

We went to the dock in the village pick up a pound of shrimp and were surprised at their size. It is an anomily that these large white row shrimp from the Atlantic were being harvested in July.  ​


To prepare, he basically rinsed them off, threw them in a pan, sprinkled some Cavender's on them (the "Salt Free" version which means "no MSGs"), covered with a lid and cooked over medium heat. No water was added because they made their own liquid and steam. After checking periodically, they turned pink and were ready to peel and eat!

DIRECTIONS
  • Rinse shrimp
  • Place in large sauce pan
  • Sprinkle Cavender's 
  • Cover with lid
  • Cook on medium heat, turning periodically and checking till pink (approximately 5-6 minutes)
  • Take off heat
  • Transfer to container to chill or place on ice (optional)
  • Serve with cocktail sauce.
We paired up our meal with a basic salad of arugula, baby spinach, cherry tomatoes, hard boiled egg, cubed avocado and cucumber with an oil, vinegar and lemon dressing, adding a couple of drops of Vitality Lemon essential oil to the dressing. Topped with cracked pepper and a little sea salt to my liking.

​As a side, we added fresh cantaloupe wedges. A perfect summer supper!!

Next time I want to have this meal, I'll have to shop for fresh gulf shrimp at Central Market in Dallas. Maybe it will be as good?? I sure hope so!!

Here's where your Vitality essential oils come in handy:

Use a drop or two of Vitality Lemon in your salad dressing or tartar sauce if serving fish with this meal.

Taste of Italy is an oil that enhances your dressing if you like Italian herbs such as basil and oregano. In fact this essential oil contains Basil (Ocimum basilicum) leaf oil, and four varieties of Oregano; (Origanum vulgare), (Origanum minutiflorum), (Origanum onites), and (Origanum majorana).

Use a drop or two of Young Living's Taste of Italy in your artisan bread mix. It's very good!

You could even expand this meal and cook tomato sauce with a couple drops of Taste of Italy. Prepare a pot of zucchini noodles, add cooked, peeled shrimp and top it with your oil infused tomato sauce! mmmmm

Weighing In

Summer is here, and my bad, I hibernated over the winter and put on some POUNDS!! We don’t have a full length mirror in the house but I realized my clothes were getting tight. I have never been one to look at myself much in the mirror anyhow but when I found one and saw… I gasped at how things had changed over the months. I had eaten too much at Thanksgiving, Christmas, New Years, Valentines Day, the weekends and oh, yeah, during the week too. But everything tasted so gooooood!!!! Ruh roh!! 

My boys and my grandkids will not bat an eye about my weight when I go visit them but I’m also visiting my brother this summer. He’s more like a string bean, and I'm guessing he will be looking at me and thinking "Orca", LOL, so I better get some of this weight off and get back on track! But seriously, I feel uncomfortable when I get beyond a certain weight.

So I started back to walking at least 30 minutes in the morning. When I’m doing my contract job from home, I’m planted in front of the computer most of the day. When I’m not doing that job or my other computer work, I’m doing things like gardening, cleaning out the chicken coop and run, fetching water and food for the chickens and cleaning the extra coop for the youngest chicks, etc.

​Then there’s harvesting from the garden and cooking and doing more of that since the only fast food around here comes out of our refrigerator. Check out my Minty Cabbage Slaw recipe!

Anyhow, the first thing I do in the morning is take that walk. I am so grateful that Jan Paul walks with me because it makes it go much faster.

​Then I drink my cup of hot Turmeric/Lemon tea and I’ve added essential oils to it for the health benefits which
promote a healthy immune response and support digestion. I add lemon juice plus a drop of Lemon, Nutmeg, Ginger, Clove, Cinnamon Bark, and Black Pepper (Vitality line). I can’t tell you how much this combination has helped!! Trust me, it is worth the trouble of getting out those ingredients and sipping that one cup of “tea”. 

To make it easier, I have combined equal amounts of oils to a 15ML bottle so I can add them all at once rather than individually.

I drink a few drops of Grapefruit Vitality essential oil in my water throughout the day and I also add 2 drops Bergamot Vitality essential oils to my shot of Ningxia Red. These are helpful in supporting my weight management and wellbeing.

I’ve switched up my consumption of food and now that it’s warm outside I really enjoy my smoothies in the morning. I use protein shakes from Young Living with frozen fruit and coconut milk.  That’s just one meal replacement.

A light sandwich is good for lunch when I add fresh veggies from the garden like banana peppers and tomatoes. I even add Malabar spinach and hard boiled egg from our very own farm fresh eggs!

Then one day, for lunch, I replaced that meal, but I used Young Living Pure Protein Complete  (Chocolate flavor) so I had dessert for lunch!! I used one scoop of the Pure Protein Complete, one scoop of unflavored gelatin, one frozen banana, a handful of frozen Malabar spinach and about a cup of coconut milk.

I am trying my best to change my habits surrounding food. It’s time to make new habits! Let’s try dehydrated apples for a change, OK??? How about some fresh watermelon with that tuna sandwich, instead of chips? How about some good fat, like an avocado, chopped up with fresh tomatoes off the vine, cilantro, chopped onions and a dash of Lime Vitality essential oil and some lemon juice? That makes a great salad topper. Good habits, make good habits, make good habits. Repeat, repeat!!  Now that’s better! 

So, all said and done, when I purposefully and intentionally started this, it was about a month ago. I did not weigh when I started because, frankly, I had looked at the scales in January and I did not want to see that number or one even close to it!! But I weighed in last night and I can tell you that I have lost at least 10 pounds and my clothes fit better. I saw someone the other day and she had commented on how much weight I had lost.

I have lost weight, I feel better and I have more energy.


Bottom line is I have changed my exercise + supplement + eating routine and it’s working for me. I'm choosing a different path. One that may not be perfectly straight but it's working!

The Black Swallowtail Butterfly

Have you planted a butterfly garden? The other day I was checking out our Bronze Fennel in the back yard. It is HUGE, taller than the Vitex, and I noticed it was sort of wilted in a few places.

I was contemplating tearing it out since it had gotten so large and unsightly in a few spots. I was also wondering where the butterflies were, since that's the whole reason I planted it in the first place! This had become the habitat for yellowjackets, bees, bumble bees and some other kinds of wasps enjoying the nectar. I kept looking in awe of all the activity. That's when I saw the caterpillars.

Realizing the Black Swallowtail butterfly caterpillars were feasting on it and will soon be forming into their chrysalis stage, I guess this plant won't be coming down anytime soon!
So it looks like we have them covered for the summer. Plenty of Bronze Fennel and sun and water at the house. Woo Hoo!

​There is an abundance of Thistle growing wild at the ranch, and the butterflies LOVE this too! Maybe more as a feeding frenzy plant than a host plant though. One day I was walking, camera in hand across the meadow, and discovered a mirage of Thistle growing and several Black Swallowtails as well as other butterflies feasting on these flowers. It was fascinating to watch them busily alight from blossom to blossom.

If you want to create a habitat for butterflies you need an area that receives 5-6 hours of sunlight each day, preferably protected from wind. They also like to have a water source available. Check to see which flowering perennials are native to your area and verify which butterflies they will attract! You can pick plants at your local nursery or order online. In the area where we live, I chose the most drought tolerant perennial varieties I could get my hands on! I like to use these plants in my landscape for color and to support the bee and butterfly population we so desperately need to foster.

Bronze Fennel 'Purpureum' (Foeniculum vulgar) is probably a favorite host plant of the Black Swallowtail. I have proof. See pics above!

Autumn Sage (Salvia greggii),  Mealy Blue Sage (Salvia farinacea), Purple Cone Flower (Echinacea sp), Lantana (Lantana urticoides), Blue Mist Flower (Conoclinium coelestinum) and Chaste Tree (Vitex agnus-castus) are no brainers for me and bring a lot to the table for our delicate winged friends here in Northeast Texas. Monarch butterflies will like Antelope-Horns Milkweed (Asclepias asperula).

Now that you have your habitat up and flowering, sit back with a chilled glass of that Mint Tea and enjoy the results of a passion for nature!

Watch for hummingbirds too! They love the red in Autumn Sage!
